As I said before, shrimp is one of my favorite foods. I can sit and eat a plate of shrimp with no cocktail sauce and be a happy girl. But, I am always concocting recipes in the kitchen. Last night I concocted this one and was really happy with the results, so I decided to share the recipe with you. I hope you enjoy this recipe as much as I did!
1 Cup Quinoa
2 Cups Chicken or Vegetable Stock
1 Cup Water
1/2 Cup White Wine
1 Onion, Sliced
1 Cup Spinach
1 Cup Green Beans (Frozen or Fresh)
1 TSP Ground Red Pepper
1/2 TSP Red Pepper Flakes
1 Pound Shrimp
1/4 Cup Lime Juice
1/4 Cup Lemon Juice
Black Pepper, Onion Powder, and Garlic Salt
Olive Oil
In a large pot, on stove add chicken stock and water
Once chicken stock and water come to boil, add quinoa
While quinoa is cooking, add the onion to olive oil in a sautee pan
Once liquid is absorbed in quinoa, add wine
Once wine is absorbed, add onions to quinoa
Add spinach and green beans to quinoa and onions
Add red pepper, red pepper flakes, black pepper to mixture
Season shrimp with black pepper, onion powder, and garlic salt
In sautee pan or grill pan, cook shrimp 2 minutes per side
Once shrimp are cooked, add to quinoa mixture
Stir in lime and lemon juice
Turn heat to low and let mixture combine for about 20 minutes
Serve and enjoy!
