Mediterranean Chicken

Tonight’s meal is light and healthy, but also fulfilling.  I love olives, arugula, and especially feta cheese and this recipe delivers on those!  Let me know what you think of this recipe in the comments below!

1 Packet of Chicken Breasts

1 Cup Kalamata Olives

1 Cup Cherry Tomatoes

Arugula

Olive Oil

1/2 Cup White Wine

Black Pepper, Garlic Salt, Onion Powder

Feta Cheese to Garnish

Season chicken with black pepper, onion powder, and garlic salt

Brown chicken on both sides in grill pan or sautee pan

Browned Chicken

In separate pan, coat with olive oil.  Then add tomatoes and olives

When chicken is browned on either side (will not be cooked through), add to tomatoes and olives

Add white wine and season with spices again

Once wine simmers, reduce heat, and cover until chicken is cooked

Add 2 handfuls of arugula and cook until wilted

Chicken, Tomatoes, Olives, Arugula, & Wine

To serve, place a bed of uncooked arugula on plate.  Top with chicken, olives, tomatoes, and cooked arugula

Garnish with feta cheese
