Until recently, I never had eaten beets, but of late I probably make them every other week. They are kind of scary looking raw, but with nothing more that a little olive oil, they taste amazing roasted in the oven. I typically eat them alone, but I wanted a recipe with a little bit more, so adapted a recipe I found on YumSugar for today’s Meatless Monday. Enjoy!

Roasted Beets
Roasted Red Peppers
Spinach
