I love breakfast for dinner, and for some reason I think it tastes better. But when my mom said we were going to have eggs in tomato sauce for dinner I questioned her. Haven’t I learned in my 25 years that mom knows best? Guess not. I was pleasantly surprised at how good this recipe turned out and how easy it is! Enjoy!
Egg
1/2 Cup Tomato Sauce or 1 Can Diced Tomatoes (with spices)
Put tomato sauce OR diced tomatoes in sauce pan on stove until warm
Crack an egg into the sauce pan (make sure you spread the egg out evenly)
Sprinkle black pepper on yolk
Turn to low heat and cover until egg is cooked
Transfer to plate and sprinkle with Parmesan Cheese
