Today’s Meatless Monday is a vegetable fridge cleaner. I had a bunch of veggies that were about to go bad, so I decided to sautee them all on the stove and throw some tomato sauce over. Very simple and I have 3 nights worth of meals. Below is the recipe.
1 Zucchini
1 Pack of Portabella Mushrooms
1 Bunch of Asparagus
Either 1 Pepper or 1/2 Bag of Frozen Pepper Strips
Black Pepper, Onion Powder, Garlic Salt
Feta Cheese
Black Olives
Olive Oil
1 Can Tomato Sauce
Slice all of the veggies into bite size portions.
Coat the bottom of a large pot with Olive Oil
Add mushrooms
Once mushrooms are cooked, add asparagus
Add zucchini and peppers once asparagus are half way cooked
Add spices
Cover the pot with a lid and cook the veggies until cooked completey
Add sauce until warm throughout
Serve in a bowl topped with feta cheese and slice black olives
Can also use onion, tomatoes, green beans, etc., pretty much any veggies you have or want to use.
