Sur la Table Sushi 101-Part 1

I was out for a sushi dinner with my friend Rachel and we sat at the bar to watch the chef prepare our sushi.  I commented to Rach that I wanted to take a sushi making class.  When I got home, I decided to look up local sushi classes and I found one at Sur la Table.  I had so much fun at the Julia Child Sur la Table Cooking Class that I booked the Sushi 101 class.  I was looking forward to this class and the class finally was last night!  Our chef was Andy Matsuda, owner of the Sushi Chef Institute in downtown Los Angeles.  He was a great teacher and we made 6 different preparations.  Here are the first 3.

If you can’t make it to a sushi class or one is not offered near you, Chef Andy Matsuda has made it easy for you to learn.  Go to YouTube.com, type in “Chef Andy Matsuda” and numerous results from California Rolls, to the proper technique of cooking sushi rice, to a steamed tomato and tofu dish come up.  Easy learning at home.

A fun new fact I learned from Chef Andy…sushi grade fish has actually been frozen, it is not fresh!  The germs have to be killed since the fish will be served raw and either freezing or cooking does this.  Do you have a sushi fact?  Leave it in the comments below!
