I love oatmeal! How much? Well, as a college athlete, for every game no matter how hot or cold the weather turned, I would eat oatmeal, blueberries, and a sprinkle of cinnamon for my pregame meal. EVERY pregame meal! After so many bowls, the substance does get tiring….doesn’t it? For me, a way to amplify and change the texture of oatmeal is baking it. I made my yummy baked oatmeal over the weekend and couldn’t wait to share the recipe with you! Give it a try and you’ll be eating oatmeal just as often as I do!
Preheat oven to 350
1/2 Cup Canola Oil
1/2 Cup Brown Sugar
2 Eggs
3 Cups Oatmeal
1 TSP baking powder
1 TSP Salt
1 TSP Vanilla
1 Cup Milk
1 TSP Cinnamon
Mix together sugar, oil, & eggs
Add oatmeal, baking powder, salt, vanilla, and milk
Spray baking dish with cooking spray
Add mixture and sprinkle top with cinnamon (I also sprinkle a little nutmeg on top)
Bake in oven for 30 minutes
Serve with warmed milk and fresh or frozen fruit of liking
